Golden syrup
is a thick, honey-colored syrup used in a variety of recipes and desserts, or as a topping for pancakes or ice cream. Golden syrup is a favorite in the U.K. and Australia, but if you live across the pond, you may have a difficult time locating it. If you have a hankering for the sweet treat, you can make a very acceptable imitation in your own kitchen. Add this to my Recipe Box.
Instructions
1. Pour the white sugar in a heavy saucepan. Jiggle the pan so the sugar will be evenly distributed over the bottom.
2. Mix the water and vinegar in a small mixing bowl. Sprinkle the mixture over the sugar.
3. Cook the mixture over low heat for five minutes. Even though it may be tempting, don't stir.
4. Turn the heat up to medium and continue to cook the mixture for about five minutes, without stirring. Remove the pan from the heat when the mixture turns a golden color.
5. Add the light corn syrup and let the mixture sit for about 3 minutes. When it stops bubbling, stir it thoroughly with a wooden spoon.
6. Let the golden syrup cool slightly and then pour it into a glass or plastic container. Seal it tightly and store it at room temperature. The syrup will last for 2 to 3 months.
